The Happy Hacker Keyboard
The Happy Hacker (aka HHKB) from Fujitsu has no Caps Lock. Instead, it uses the combination Fn+Tab to emulate Caps Lock.

The HHKB is an favourite for programmers because it takes up very little desk space, has excellent action, and put the Ctrl key where less educated keyboards put Caps Lock. HHKB comes in several forms, and I've used one for several years as my main keyboard. The only keyboard I've ever found with a better action is the Dana from AlphaPlus, which unfortunately is zero-compliant, with a large, useless Caps Lock. The HHKB gets top score, minus one point because the action, while good, is not the best.
